Prepare one portion of the Homemade Pizza Dough according to the recipe. Once the dough has completed its rise, roll it out to your desired thickness and transfer it to a lightly oiled pizza pan. Using your fingertips, gently press around the outer edge of the dough to create the crust. Lightly spray or drizzle the dough with olive oil, then season with a pinch of sea salt and freshly cracked black pepper before adding the remaining toppings.
Slice the tomatoes and arrange them in a single layer on a paper towel while you prepare the remaining ingredients. This helps remove excess moisture for a crispier pizza. Just before assembling the pizza, lightly sprinkle the tomato slices with sea salt to enhance their natural flavor.
Evenly distribute the shredded mozzarella over the dough, then arrange the prepared tomato slices evenly across the top.
Bake on the top oven rack at 500°F, rotating the pizza as needed to ensure even browning. Bake until the crust is golden and the cheese is melted and bubbling.
Remove the pizza from the oven and immediately tear the burrata into pieces, distributing it evenly over the hot pizza. Top with fresh basil leaves, drizzle with balsamic glaze, and, if desired, lightly spray the crust with olive oil before slicing and serving warm.
